Well they needed to create tension between father and daughter, I dunno probably just because it made the movie more interesting. There had to be some sort of conflict. Plus in a lot of movies the main character's personality changes.

Just think how old Timon & Pumbaa are getting...they've been in nearly 3 generations of lions. And don't even mention about Rafiki's age. He had gray hair when he was presenting Simba! It seems like on the lions age in The Lion King movies.

The magic of animation! I'm sure they age but just not at the same visible rate. It'd be a little scary to see Timon and Pumbaa get even bigger and stronger, they might even get the idea to start picking on some of the lions like Simba or Kovu.

Rafiki is just too cool for the elements of time to take any effect. He's like the Chuck Norris of the Pridelands, only cooler...
