I'm trying to finish an one-shot fanfic, but I can't...I'm struggling with grammar.

If anyone's able to help me, which form is correct?

OR
"If there was one thing she didn’t do, it was apologize."

^ I believe the first sentence is correct. It reads far better than the second one. Although, I would suggest maybe changing the wording, perhaps to "If there was one thing she wasn't known for doing, it was apologising."
