^ True, true. It's explained better in the show TBH. Once someone is evil enough their souls change and could potentially spawn a demon god, it's pretty much like getting demon-possessed (?). They're not really people any more. Those are the ones whose souls they eat - they're not supposed to do it to normal human beings.
