Official - not to be confused with Canon - refers to the legitimacy of something from The Lion King fandom. In the context of The Lion King fandom, if something is official, then it is from any official source in the fandom (the movies, the music and the literature). Basically, something that is official is something that, at any point, was created by, approved by, or speculated by the Walt Disney Company.
