Maybe not in RL, (and that is not what we’re really discussing here) but Disney has a long tradition for going for "love at first sight," and generally focusing on love and romance in their movies. The heroes always have a love-intrest. In TLK’s case, it was convenient to make the hero (Simbas) childhood friend his love-intrest and Queen. They had already built a very strong bond as cubs, and after meeting eachother again after spending so much time apart.. that bond just grew deeper.
I agree it seems quite rushed, but it’s a movie (for kids) and Disney needs to keep it moving. They simply didn’t have time to make a lengthy sequence where Simba and Nala could slowly develop feelings for eachother.. Plus, Nala was part in helping Simba realize he had to face his past and go back to the Pridelands. This was a rather pressing matter that needed to be dealt with as soon as possible. Disney just made Simba and Nala fall in love first, so Simba could take Nala as his Queen when he returned to claim the throne. (And besides, they were engaged from cubhood anyway, lol)
Anyway, I don’t think the question is "why did they fall in love," but rather: "why not?"
