In the CYFTL scene, I don’t Simba actually pinned Nala, they were just rolling down the hill, and Simba happened to come on top of Nala when they landed at the bottom.

The trick, despite being in an animated film, is a very valid, real-life tactic, particularly effective when your opponent is heavier and/or stronger than you. I sort of understand how it works with a little more detail than the OP mentioned...but I won't bother going all scientific on you guys, as it's already explained well enough.
Personally, I like to believe that Nala learned the trick herself. It's sort of her 'signature move'. If she had learned it from anyone else, or if it was a common tactic in fight among the Pridelanders, Simba would not have been able to use it to identify Nala in the jungle. Therefore, at the very least, Nala had to be the only one that Simba knew of that used it. That suggests that the move is known to either Nala alone, or possibly Sarafina as well.
