Many movies shoot their scenes out of order. In live action, they do it because of convenience of location. In animated films...I don't think its a matter of experienced. The animators are all perfectly experienced in drawing their characters before they start animating the first scene. But I don't know exactly why they don't shoot them in order. There has to be a logistical reason.

You remember in the special features on the second disc of TLK Moka, how they mentioned that Having Mufasa return was an idea they came up with later on, as they were planning on not having him return at all, maybe that's why? ^^

Right, they mentioned that having Mufasa return was sort of symbolic for Moses and the burning bush. It was also the "to be or not to be" scene, which they found out was needed for the movie ^^

Those videos show us that...apparently...TLK wasn't made in an organized process :P There were too many ideas, people were too excited and they didn't have enough time to make it all fit together. They said that the plot wasn't fully developed until they finished the movie, lol. Maybe that's a reason why it was made out of order.
