Have a TLK X, where they have a bunch of extra scenes that people want, and in a coherent manner, but that can encompass all three movies without actually changing either one. A sort of "Tales from the Pride lands" thing.

A "friendly" scene between Muffy and Scar. IMO, it would have made that 'Judas' moment even more sweet/bitter.

Other things I would have liked to add:

Nala returning home after the Elephant Graveyard scene (Sarafinas/Sarabis reaction)

More cub/teen simba in the jungle (trying to pretend the Hakuna Matata movie doesn`t exist)

Having Scar/Mufasa mention something about their parents, such as both their names.. maybe having Mufasa tell Simba something about his cubhood.
